Vitamix Recipes Thai Ginger Soup | 500ml water 1 Spring Onion 1 Small Carrot 1/2 Stalk Celery 1 Thin Slice Lemon, peeled 1/4 Apple 130 g Cashew Nuts (approx 2 handfuls) 1 Small Slice CourgetteInch of Courgette 1 Small Slice Cabbage 1 Slice Red Pepper 1/2 Clove Garlic 10 g Fresh Coriander (approx 1 handful) 1 cm Slice Ginger (depending on taste) 1 Vegetable Stock Cube 250 ml Coconut Milk (optional) 170 g Cooked, Cubed Chicken (optional) 160 g Cooked Noodles (optional)
Place all ingredients in Vita-Mix container in order listed. Secure 2-part lid. Select VARIABLE, speed #1. Turn machine ON and quickly increase speed to #10, then to HIGH. Run for 5 to 6 minutes or until steam escapes through the lid plug opening. Reduce to VARIABLE, speed #3 and add cooked cubed chicken and/or noodles thru lid opening and run for an additional 5 seconds. Serve immediately.

Place all ingredients in Vita-Mix container in order listed. Secure 2-part lid. Select VARIABLE, speed #1. Turn machine ON and quickly increase speed to #10, then to HIGH. Use tamper to press ingredients into the blades while processing. In about 30 to 60 seconds, the sound of the motor will change and four mounds will form in the mixture. Turn machine OFF. Do not overmix or melting will occur. Serve immediately.
