Green Curry and Almond Sauce

Drizzle this Asian-inspired sauce over roasted vegetables and pastas.

Ingredients

  • 240 ml (1 cup) water
  • 120 ml (½ cup) vegetable oil
  • 60 ml (¼ cup) sesame oil
  • 475 g (2 cups) raw almonds
  • 1 Tablespoon fresh ginger root
  • 5 garlic cloves, peeled
  • 1 Tablespoon Sriracha sauce
  • 1 Tablespoon green curry paste
  • ½ teaspoon salt

Directions

  1. Place all ingredients into the Vitamix 1.2L container in the order listed and secure lid.
  2. Turn the dial to 1 and slowly increase speed to 10.
  3. Blend for 2 minutes, using the tamper to press the ingredients into the blades.
